CG on the Curtiss Junior
I'm checking it with a thread from the front of the bottom, rudder servo, cutout. I have a small level that I place
on the center of the cabane struts where they attach to the wing. This seems to be a good spot as the model is
inverted and hanging on the thread. The CG is right on, both with the level and simply eyeballing it.

I think the level is unnecessary, and may even be messing up the measurement if you don't get it positioned so that its C/G coincides exactly with the plane's C/G. Eyeballing for a level fuselage position is adequate. The tail moment and tail area are both so large on the Junior that it will tolerate a fairly wide C/G range.
My transmitter is a new Hitec Eclipse 7 with Spectra so it is quite easy for me to adjust control throws. I will do that as you suggested.
I just measured the elevator travel on my Junior. On full rate it has 5/16" travel (measured at the elevator trailing edge) , both up and down. On dual rate it has 1/8" travel in both directions. I normally fly it on full rate, and with that setting it is quite gentle and pleasant to fly, not touchy at all, but still has enough elevator authority for loops and other trainer-type maneuvers. It does not have enough for inverted flight. It has enough elevator authority for a stall, but not enough to make it spin; the elevator can't maintain the stall and the attempted spin immediately decays into a steep spiralling turn. I also normally leave it on full rate when I let beginning fliers try it, unless they're having serious problems with overcontrolling.
